Spaghetti San Marco

 

  • 1lb of Fettuccine or 1 box of Garden Delight Fettuccine or Spaghetti
  • 1 pkg of Grape Tomatoes sliced in half
  • 4 cloves garlic sliced
  • Extra Virgin Olive Oil
  • ½ cup Pinot Grigio
  • Hand Full of Fresh Basil
  • Salt
  • Pinch of Cayenne
  • 2 T Pecorino Romano
  • 1/2 cup Ricotta Salata shaved
  • Preheat oven to 425 degrees F.
 

 

This dish is prepared very quickly so cook the pasta in salted boiling water for approx 8 minutes.
 
In a sauté pan pour a thin layer of Extra Virgin Olive Oil, add the grape tomatoes, garlic, salt and cayenne. Sauté until the tomatoes begin to get soft. Add the vino and reduce for a few minutes.
 
When the pasta is ardente, drain but save some pasta water.
 
Put pasta in pan with tomato mixture and stir, sprinkle with Romano and grate the Ricotta Salata and garnish with more fresh basil and serve.
 
Very simple, molto delicioso!
