Isabella’s Signature Pesto Sauce

  • 1 bunch of fresh basil, approx 2 cups
  • 3 cloves of garlic
  • ¾ cup of Freshly Grated Romano Cheese
  • 1 teaspoon kosher salt
  • ½ t cayenne pepper
  • 1 cup extra virgin olive oil
Add everything but the extra virgin olive oil in a food processor and puree.  While the processor is running add the extra virgin olive oil to blend.
 
Tips:
  1. Add Pesto Sauce to drained pasta and enjoy!
  2. Make a Caprese Salad….layer of sliced tomatoes topped with Fresh Mozzarella and topped with Pesto Sauce.
  3. Pesto Butter:  Add 1 tablespoon of Pesto to softened butter, return to refrigerator to set
  4. Use Pesto Butter on bread, steamed vegetables, and fish.
  5. Pesto Mayo:  Add 1 tablespoon of Pesto to mayo to give your sandwiches and Panini’s new life.
  6. Grill vegetables; eggplant, zucchini, squash, peppers. Put them on  crusty Italian bread, top with mozzarella.  Spread a layer of pesto sauce or pesto mayo on the bread and put under broiler to melt cheese and enjoy!
