Insalata Calabrese

- 2lbs Red Potatoes
- 1 lb of Green Beans
- 1 Red Onion
- 3-4 Cloves of Garlic mashed
- Cherry Tomatoes
- One handful of Fresh Basil
- 1 cup Olive Oil
- Salt
- Cayenne Pepper
- Cook the potatoes in salted boiling water for approx 10 minutes or until tender, steam the green beans 3 minutes, strain both potatoes and green beans and put in bowl to cool to room temperature.
- Add the garlic to the olive oil and set aside.
- Slice the Red Onion and Cherry Tomatoes and add to the potatoes.
- Rough chop the Basil add to potatoes.
- Add the Garlic Olive Oil.
- Season with salt and pepper to taste.
