Insalata Calabrese

  • 2lbs Red Potatoes
  • 1 lb of Green Beans
  • 1 Red Onion
  • 3-4 Cloves of Garlic mashed
  • Cherry Tomatoes
  • One handful of Fresh Basil
  • 1 cup Olive Oil
  • Salt
  • Cayenne Pepper

 

  1. Cook the potatoes in salted boiling water for approx 10 minutes or until tender, steam the green beans 3 minutes, strain both potatoes and green beans and put in bowl to cool to room temperature.
  2. Add the garlic to the olive oil and set aside.
  3. Slice the Red Onion and Cherry Tomatoes and add to the potatoes.
  4. Rough chop the Basil add to potatoes.
  5. Add the Garlic Olive Oil.
  6. Season with salt and pepper to taste.
